Who Want’s Some Skinny Vegan Pizza??….YES PLEASE

I am in love with pizza! It is the one food I really crave when I am trying to be good and cut back on carbs and fattiness. Stuffed crust, thin base with loads of veggies is my idea of heaven, BUT it’s over processed a lot of the time, and usually over priced from the popular chains. Pizza is definitely a comfort food for me, especially enjoyed in bed with Netflix with an early night… yes please.

But all that thick dough, processed cheese and sauce isn’t good for you, and I have found since I have changed my eating habits, if I do indulge in a pizza, I tend to get a sore stomach the next day (and end up feeling like a whale).

I have read loads of ‘healthy pizza’ recipes and ideas online, but something that caught my eye and popped up a few times was a ‘Quinoa Pizza’. Interesting. There are so many different ways to make a quinoa pizza base, I decided to come up with my own which, like all my recipes, is simple to cook.

Quinoa is a great ingredient to use to a healthy pizza base (why didn’t I come up with this!?) as it is extremely low in fat and versatile. If you don’t know much about quinoa, click here to read more.

This skinny, quinoa avocado and rocket pizza can be enjoyed by everyone – not just veggies and vegans, this pizza is also gluten free and I am sure meat eaters will love it.

Making your own low fat, pizza is fun because you can use any topping you like. I used rocket, red onion, red pepper and my favorite avocado to keep things both delicious yet filling. Rocket seems to be a bit like marmite, honestly I find the taste quite over powering on salad, but it works really well with these ingredients so if you are scared of using rocket on this vegan pizza, I am telling you don’t be, the sweetness of the red pepper will save you. I survived and I ate a lot.

The only slightly annoying thing about this vegan quinoa pizza, is that you need to soak the quinoa overnight first to make the base. I think it is worth the wait!

Also – a lot of the recipes that I read needed a pizza pan, which don’t own. I used a parchment/baking paper and normal frying pans to create the circle shape, which you can do too. Any pan or pot will do. Once you have pour and shaped your base in the pan, you just life the parchment/baking paper and transfer it onto and oven tray.

Another thing, you need a food processor for this!

Vegan Quinoa Avocado, Rocket + Red Pepper Pizza

Ingredients
  1. 1 ½ cup of quinoa
  2. 1/2 cup of water
  3. ½ white onion
  4. ½ red onion
  5. 1 glove garlic
  6. 2/3 cup of strained/chopped tomato sauce (from carton!)
  7. 1 cups of rocket
  8. ½ avocado
  9. ½ red pepper
  10. 2 tbsp. of coconut oil
  11. Dry herbs for seasoning
Overnight
  1. Put the dry quinoa in a large bowl and soak in water over night, making sure all grains are covered
After Soaking
  1. Pre-head the oven to 190 degrees
  2. Drain the quinoa and blitz with 1 tbsp. of coconut oil in the food processor with the ½ cup of water until the quinoa looks like pancake batter. This should take 2 -3 mins
  3. Line your pan with parchment/baking paper and spoon your quinoa pizza mix in to shape the base
  4. Depending on the size of your pan(s), you can have a few small or a large pizza
  5. Bake in the oven for 20 minutes, turning over half way through
  6. 5 minutes before the base is to come out the over, chop the onion and the garlic and sauté in the remaining coconut oil for a few minutes
  7. Add the strained tomatoes and some dried herbs then continue to stir this on the heat for a few more minutes
  8. Once the sauce is cooked through, removed the pizza base(s) from the oven and spread sauce over them evenly
  9. Add the chopped red onion and sliced ½ red pepper to the base(s) and return to the oven for another 10 minutes
  10. Once cooked, remove from the oven and top with rocket and sliced avocado before serving!

Who needs a take away pizza when you can munch on this yummy vegan pizza guilt free. This is such a good comfort food to pig out on when you are trying to be good, and you don’t feel horrible after eating it. I really do believe in ‘eat good, feed good’ and this quinoa pizza is a perf example. If you have any other veggie topping ideas for pizza that work well please let me know, I need some inspo 🙂
