“My mind says Victoria’s Secret Model but my heart says Vegan Nutella”

My transition to vegetarian to vegan has been much easier that I thought. Through out this period I have tried loads of new recipes and dishes and there are so many amazing vegan alternatives available these days. I can get vegan cheese, vegan mayo, vegan burgers and pies, desserts and ice cream and so on.

I get a lot of inspiration from food I used to eat though. Examples – I have previously eaten thick and creamy risottos and then I have wanted to try to come up with a dairy free alternative to the dish. Also meals like vegan shepherds pie and vegan spaghetti. I am always trying to come up with ways I can veganize (this is a word – ask any vegan lol) food and it was only a matter of time before I caved and attempted to find an alternative nutella for vegans.

Not only does this vegan avocado nutella taste amazing, it is packed with nutrition too. I prefer a crunch texture with my spread do I didn’t blend the hazelnuts for too long, but if you prefer a smooth spread just blend the spread like crazy.

I ate my new fav spread this morning on some wholemeal toast, but it can also be added to oatmeal which I will 100% being having for breakfast tomorrow.

This can also be eaten as a vegan chocolate, hazelnut mousse (OMG) – there is no judgement here, trust me lol.

Ingredients
  1. 1 avocado
  2. 1.5 tbsp. of your fav vegan cocoa powder or raw cacao
  3. 1 tbsp. of agave syrup (or honey for non vegans)
  4. 1/2 cup of hazelnuts (shelled is OK)
  5. 1 tsp. of your fav nut butter (I used hazel nut) - this is optional
Instructions
  1. Blend all the ingredients - as simple as that!
