Warm Wild Mushroom & Kale Salad (with garlic oil – yum)

“I’ll take the garlic with a side of salad please – with extra garlic”

Ok so I think after making my curried cauliflower & spinach salad I am now obsessed with warm salads.

I have been having them for my lunch this week as part of my stop-eating-so-much-crap plan and they definitely do leave me satisfied. I think the fact that the salad is warm helps too, doesn’t feel like a boring, cold bowl of leaves.

I am also obsessed with garlic, so it only seems natural to combine 2 obsessions into a big bowl of wholesomeness.

I’ve used kale in this salad as I want to try and eat more of this powerful leafy green. I’ve found it can usually be quite over powering (gross) in salads so the garlic oil does a good job of making it edible. I made my own garlic oil for this recipe which I haven’t done before and it is so easy and SO GOOD.

Why not buy a big bunch of kale and make kale chips too? Happy hump day people – Jess x

Warm Wild Mushroom & Kale Salad

Ingredients
  1. 200g wild mushrooms
  2. 2 bunches of kale
  3. 1 garlic
  4. 1/2 cup of pine nuts
  5. coconut oil
Instructions
  1. Peel the garlic and add the whole cloves into a pan with 6 tbsp. of coconut oil, leave to fry for around 6 minutes before discarding the garlic - this will give you the garlic oil
  2. Chop the mushrooms if needed and in a separate pan saute in 1 tbsp. of coconut oil
  3. Warm the pine nuts in a dry pan for around 3 minutes until they start to brown, remove from heat
  4. Rip the kale into pieces from the stalk and transfer into a large bowl, pour the garlic oil over the kale and toss to ensure all the leaves are covered
  5. Add the mushrooms to the kale leaves and toss again
  6. Sprinkle the toasted pine nuts ontop of the salad and serve

Vegan Almond Niiice Cream

If in doubt just eat (vegan) ice cream.

It is so hot in Abu Dhabi just now! And the best way to deal with roasty toasty temperatures is…. ice cream. I love ice cream.

I decided to make another vegan ice cream recipe, using a banana base similar to my Vegan Mint & Cacao Ice Cream. A healthy alternative to dairy ice cream, this is a really easy recipe. This time I have gone for Almond flavor, not only because I love almond flavored anything, but because of the protein and other nutritional benefits almonds/almond butters contain. Healthy, vegan ice cream – yes please.

After a successful week of hitting the gym and clean eating (minus the pizza lol) I can enjoy my ice cream – dairy free and guilt free. I used Agave syrup for the drizzles but you can use maple syrup too as honey is not a vegan product – I will blog about this soon.

Anyway it’s documentry and vegan hot choc time. I’m watching Living on one dollar – highly recommend, eye opener. Hope you have/have had a great weekend and enjoy your almond nice cream people – Jess x

Ingredients
  1. 2 - 3 bananas
  2. 3 tbsp. of almond butter
  3. 1/2 cup of sliced almonds
  4. Agave/maple syrup for topping (optional - honey if not vegan)
Instructions
  1. Chop the bananas into small chunks and freeze either overnight or for 2 hours
  2. Blend with the rest of the ingredients
  3. Sprinkle some chopped almonds on top and drizzle with your syrup
  4. Eat straight away or return to freezer for your time of need

After what has felt like the longest week EVER, I am happy to announce the launch of my newly designed blog! It’s been a pretty tough (when I say tough I mean soul destroying) process, but I am now at a stage where I am excited to re-launch and start blogging again. I now have full control over the site and access to a lot of cool applications, making it a lot easier for both me and you.

• Contact Form – It’s now really easy for everyone to drop me a message via my contact page

I now have a much clearer idea of my stats too, information about my followers activity on the blog so I can get a clearer idea of what you all like. During my week of planning and designing, I have come up with loads of great ideas for blog posts, both recipes and healthy and natural lifestyle tips which I can’t wait to share with you so watch this space!

Please bear with me as I continue to tweak the blog and work through glitches and also please let me know if anything doesn’t work/flow the way it should. There are still a new things I need to tidy up and want to change, but I couldn’t wait any longer…I would much rather start blogging again than completely sign off until the page was perfect. I really appreciate your patience and feedback.

What I eat

It may seem like a silly question, but it’s a question I do get asked by friends, followers and colleagues…. What do you eat?

Although I don’t like to class my eating habits or diet, if I had to, I would say I am a pescetarian.

1. a person who does not eat meat but does eat fish.

I love fish, but it’s the only meat I eat. There are a few reasons for this, but I am not going to preach. I didn’t write this blog to try and convert people to my way of living 🙂

I also love cheese and bread. A lot. It’s probably one of my weaknesses.

On a day to day basis, I try and feed my body nutritious foods which will give me energy and keep my weight in check.

My daily diet plan looks like this;

As soon as I open my eyes;
Green tea, with a teaspoon of coconut oil.

Breakfast;
Smoothie. I have a few different recipes I like to switch between, but they are always almond milk, berry and oat based. I am always sure to add 3 scoops of my protein powder from Protein World’s slender blender product. A breakfast smoothie packed with energy and fibre keeps me full until lunch time ensuring I don’t give in to any mid-morning snacks. I also can find it quite difficult to eat a lot when I have just opened my eyes, so a smoothie is great for me to drink over an hour as I wake up.

Lunch;
I prepare my lunches either the night before or the beginning of the week. I try and get as many vegetables into my meal as possible. I will usually make a large tub of veg which has been roasted in coconut oil. Sweet peppers, courgettes, mushrooms… yum. I have recently been creating quinoa salads and trying low fat wraps too, which I will add to my blog as and when I can. I make my lunches as filling as possible, to keep my going until dinner time and to make sure I don’t have to eat too much in the evening.

Dinner;
Usually something quick and light, but still packed with protein before I head to the gym or yoga. I love fish or Quorn grilled vegetables and whole wheat pasta recipes. If I have time, I will cook a large dish which I can freeze such as veggie cottage pie, veggie chilli or a baked potatoes. At evening time, I really try and keep the fat content and calories low.

Before Bed;
To feed my sweet tooth, I will make a warm vegan drinks, either a hot chocolate or spiced almond milk.

Superfoods I try and eat every day;
• Coconut oil
• Raw Cacao
• Nut butter
• Green tea
• Oats
• Blueberries
• Spinach or Kale

Foods I have to stop myself eating every day;
• Ben & Jerry’s
• Indian takeout’s
• Bread with oil’s
• CHEESE

Reasons to treat yourself

Of course, I don’t eat like this every day of the week. Not because I don’t have the willpower too, but because you need to treat yourself and eat foods that you enjoy. I have found that depriving yourself of your guilty pleasures, will only result in binge eating and straying from a healthy lifestyle. I also allow myself to enjoy the occasional take away and large tub of Ben & Jerry’s, and I don’t feel guilty for doing so because of my routine eating habits. I don’t analyze menus when I am eating out and try and count calories in my head either, I allow myself to have whatever I want, simply because I know my other two meals that day will have been healthy and natural, and any excess I burn off at the gym. By sticking to your meal plans or diets consistently, your metabolism beings to recognize the food’s you are eating, especially if you have a routine like me. It doesn’t need to work as hard, which can actually result in gaining weight, another reason to treat yourself every now and then if you didn’t have one!

I don’t diet anymore, this is my lifestyle. I am never hungry and I love everything I eat. I have tried numerous diets over the years, and the above works for me. Not only do I feel healthy, I feel happy too. I never feel frustrated or disappointed with myself either. Remember;

‘There is no diet that will do what healthy eating does’
